Work the flour and all the ingredients until you obtain a smooth and elastic dough, then roll the resulting dough into a thin sheet.

A please you can obtain a colored paste by adding the SARI natural dyes. Let it dry for a few minutes and pass it through the appropriate die. Roll out tagliatelle obtained on a floured cutting board and let it dry

Ingredients

INGREDIENTS FOR THE PASTA

  • 4 white shell eggs from Livorno chicken (very suitable for homemade pasta)

  • Salt to taste

  • Pepper as needed

  • Extra virgin oil 2 tablespoons

INGREDIENTS FOR THE SEASONING

  • Sautéed mushrooms 314 ml

  • Cooking cream

  • Golden onion

  • Speck

  • Grana cheese flakes

Preparation

Bring salted water to the boil

Fry the onion with a little extra virgin olive oil and add the mushrooms and the speck cut into strips. Salt and pepper to taste and add the cooking cream.

At this point, throw the tagliatelle into boiling water until they reach the desired level of cooking (they are generally ready in 4 minutes).

Drain the pasta and season with the prepared sauce.

Add the parmesan flakes.
